Looking for a vegetable soup recipe that’s tasty, healthy, and easy?
I made my own creation last night and considering it was my first time making a pureed vegetable soup, I think it turned out a million times better than I thought it would! It was inspired by the vegetable puree soups that my mom use to make.
Here’s the recipe. Feel free to adjust the quantities and types of vegetables as you please! Be creative.
Ingredients:
1 large cauliflower
1 medium sweet potato
1 package of pre-cut butternut squash
1 large red onion
1/6 of a green cabbage
3/4 of a package of frozen sliced tri-color sweet peppers
Tumeric
Oregano
Basil
Fennel seed
Cayenne Pepper
Salt to taste
Parsley to garnish
To add to the burst of flavor, try adding a parsnip or anise.
